A town to rediscover yourself.21"Hegi soba" is one of Tokamachi City's best-known dishes. The name "hegi soba" originated from the name of the container in which the soba is served, which is called a "hegi"The dish was created when locals use a type of seaweed called funori, a seaweed that is actually also used in the town's kimono making practices, as a binding ingredient. The result was a pleasant soba that had a more satisfying mouth feel than its more typical brother. Further still the soba is served with mustard instead of wasabi, this is also because wasabi didnʼt grow well in this area but happily mustard worked well with this new soba and Hegi Soba was born.It is said that Tokamachi's kimono industry traces its origins back to the time when people holed up in their houses during the winter months when they were unable to work in the fields. Today, still using the traditional methods of kimono making and dying that were once practiced, kimono making is still a big industry in Tokamachi. At no place does this shine brightest than at Kimono Aoyagi, where they have been practicing the traditional kimono making techniques since it was established in 1938. From dyeing to decorating and forming the entire kimono is made in house by these artisans. The passion that these artisans have for their work can not only be seen in the final product but in every step leading up to it, as each and every step is done with the utmost attention to detail.
